I spent 15 years building software platforms. But my dream was always to have my own restaurant. My dad was a chef who owned restaurants — I grew up in kitchens, surrounded by the energy of a dinner rush and the pride of feeding a community.

When I finally opened my own place, Daikon Carrot in Jersey City, it was everything I'd hoped for — the regulars, the team, being part of a neighborhood. But between the delivery commissions, the software fees, and the financial pressure, I had to close. Walking away from those relationships — with my team, with our community — was one of the hardest things I've ever done.
